Grilled Viva la Faba Cheese with Kimchi

Not your average grilled cheese — this one's got attitude.

We recently met the lovely team from Complete Organics at the Food Innovation Camp in Hamburg. We tasted each other’s creations, and something clicked: their flavorful, fermented Original Kimchi with our melty Viva la Faba Intensivo slices? Yes, please.
We knew we had to create something together, and what better way to combine forces than a warm, crispy, flavor-packed grilled cheese?
You’ll need:
6 slices of Viva la Faba Intensivo
2 big slices of fresh Kartoffelbrot (potato bread)
4 spoonfuls of Complete Organics Original Kimchi
Vegan butter (any kind you like)
A few green onions, chopped
How we made it:
We started by melting some vegan butter in a pan. When it was nice and hot, we added the chopped green onions and let them sizzle until soft and fragrant.
Once hot, we placed our bread slices in the pan — just the bread — and fried them on both sides until they were lightly golden. This gave the sandwich even more crunch and flavor later.
Once the bread was toasty, we began assembling the sandwich directly in the pan:
We laid down the first slice of fried bread.
Then we added 3 slices of Viva la Faba Intensivo.
On top of that, we spread about 4 spoonfuls of Complete Organics Original Kimchi.
We followed with another 3 slices of cheese to make sure it was fully layered.
And finally, we closed it off with the second slice of bread.
We covered the pan to let everything heat through, while the bread turned golden and crispy on the outside, and the cheese softened and melted on the inside.
Once both sides were toasty, we took it off the heat, sliced it in half, and shared it immediately.
