For the dough:
350g flour
225ml water
½ tsp salt
2 tbsp olive oil
Mix the flour, water, salt and olive oil in a bowl and knead into a smooth dough. Cover and let rest for 30 minutes.
For the filling:
2 large oder 3 small potatoes
Salt and pepper
1 tbsp vegan butter or olive oil
Red pesto
vegan Viva la Faba cheese
Meanwhile, peel, boil and mash the potatoes. Season with salt, pepper and a tablespoon of olive oil or vegan butter.
Divide the dough into 4 equal portions and roll out. Spread generously with vegan red pesto, mashed potatoes and our delicious Viva la Faba cheese.
Fold both sides of the dough over the filling and gently roll out to make sure the filling is evenly distributed.
For the herb butter:
2 tbsp vegan butter
2 tsp herbs (of your choice)
a pinch of garlic powder
In a separate bowl, mix the vegan butter with the herbs and a pinch of garlic powder.
Toast the stuffed bread in a skillet over medium heat until golden brown on both sides, about 3-4 minutes per side.
Brush the bread on both sides with herb butter.
